Closing Redfern, New Coffees and Supporting CafeSmart

For those who have been paying attention we have closed our retail space in Redfern as the building is set to be converted into apartments. I would like to thank our customers/friends for supporting us over the past six and half years. Boy, that went fast!
And thank you, our members and subscribers for being interested in what we do.
Our roastery is still very much running and you can continue to shop our full range online. We hope to see you further down the road with a new roastery and retail space.
Supporting CafeSmart and Sydney Homelessness Week
For the past few years our retail store worked with StreetSmart to raise funds which go to grass roots organisations alleviating homelessness in Australia. As we no longer have the retail store, we will donate sales from our online store. The week of August 5th through 9th we will be donating 30% of our online sales to CafeSmart. Check our Instagram post for details on how to be involved.
New coffee - Yemen and Kenya Peaberry
We have two premium coffees roasted. The Yemen*, natural process is from al Hamdani, a difficult coffee to procure given the civil war in Yemen. And a Kenya Peaberry is washed and sundried. Coffee needs to be processed after the cherry is picked. This includes fermentation, there are a myriad of fermentation styles, and the bean needs to be dried. The coffee flavour is fundamentally affected by process. We will deal with this in later newsletters but washed coffees tend to yield more acidity and brighter flavours while natural processes yield, less acidity and sweeter flavours. Though this is a whopping generalisation.
*Note: The Yemen is no longer available.
Thoughts on brewing recommendations
Our brewing recommendations are a guide. It does not preclude you doing what you wish with the coffee. For instance, the Kenya Peaberry is best suited for filter/plunger etc. I believe it is wasted brewing through an espresso style process. There are other coffees like the Yemen which brew wonderfully through espresso. However, you will only discover this by living dangerously. EXPERIMENT!
